For our competition with the brand Yency, we offer you a cheesecake recipe, but a healthy version!


For the base:

-70 g soft dried figs
-70 g almonds
-1 pinch of salt
-25g crushed walnuts

For the cream:

-100 g soy cream
-200 g plain cottage cheese
-3 tbsp yacon syrup (GI=1)
-1 vanilla pod
-2 gelatine leaves


-Prepare the cheesecake base by mixing the chopped figs with the almonds + pinch of salt + nuts
-Put this mixture in the fridge
-Dissolve the gelatine in a bowl of cold water for 10 minutes
-Heat the soy cream with the vanilla in a saucepan. Bring to the boil for 1 minute. Then turn off the heat.
-Add the cottage cheese and beat vigorously.
-Add the gelatine and let it melt.
-Pour this cream over the base
-Put in the fridge for 4/5 hours
-Turn out
-Add yacon syrup as a topping
